Created in homage to the historical participation of the Giusti family in five of the late 19th century International Fairs: Vienna 1873, Paris 1889, Antwerp 1894, Brussels 1897 and Paris 1900. In each of these occasions, Giusti balsamic vinegars were awarded gold medals, displayed together today, along with other awards, on the historical Giusti label.
Five special bottles, containing a precious selection of balsamic vinegars, extracted from the finest family casks from that same era. Each of the five labels are the original banners of the respective International Fairs, created in the liberty style of that era.

The “Tradizionale” is the maximum expression of balsamic vinegars, from the lofts of the houses of Modena. Obtained from the single ingredient of cooked grape must, it is slowly aged according to the ancient system of “Decanters and Refills,” in antique series of barrels of various woods.

Balsamic Vinegar has been synonymous with the culture and history of Modena since time out of mind. It owes its existence to the specific environmental features of the area, which has combined with the skill, wisdom and expertise of the human factor in a unique blend to create an exclusive product, found only in what are today the Provinces of Modena and Reggio Emilia (in other words, the old Este Dukedom). The best-known producer of the time was Giuseppe Giusti, and the family firm still plays an active part in the Consorzio Aceto Balsamico di Modena. The first references to its production of Balsamic Vinegar dates back to 1605, and it possesses certificates of participation at a large number of fairs exhibitions.
From the regulatory point of view, the first ministerial authorisation to produce "l'Aceto Balsamico del Modenese" dates from 1933.
This balsamic vinegar from Modena is aged for 12 years to be complex in flavor. Its syrupy and thick texture makes for a delicious experience. This exceptional balsamic goes through a time-honored aging process in successively smaller wooden barrels to give it unique flavor characteristics. The White Giusti condiment is born from a soft pressing of Trebbiano grapes, from which a particularly sweet juice is obtained.
This is then combined with high quality white vinegars and aged in french oak and ash wooden barrels. This process keeps all the fruity and floral aromas of the grapes, creating a very pleasant condiment, thanks to the contrast of its low acidity and the notes of sweet, yellow fruits and dried citrus.

1 Medaglia Argento Aceto Balsamico - Il Profumato
Era il 1598. Modena accoglieva la sfarzosa corte del Ducato d’Este diventandone la Capitale. E come narrano i registri dell’epoca, già allora la famiglia Giusti produceva prelibatezze per le migliori tavole, sebbene la fondazione ufficiale della Casa risalga al 1605 per volontà di Giuseppe Giusti.
Il primo passo nel percorso gustativo dei Balsamici Giusti. Di grande intensità e persistenza di profumi,
le note calde e fruttate del mosto d’uva ben si amalgamano con una buona e rotonda acidità balsamica. Ingredienti: Mosto di uve cotto, aceto di vino invecchiato. Invecchiamento: In botti di rovere francese del 1900 con aggiunta di aceto balsamico già invecchiato prelevato da batterie di botti secolari.
Aceto Balsamico di Modena - invecchiato 25 anni
Aceto Balsamico significa da tempo immemorabile cultura e storia di Modena. Infatti la sua esistenza é dovuta alle particolari caratteristiche pedoclimatiche del territorio alle quali si sono aggiunte i saperi, le conoscenze e le competenze del fattore umano che in una mirabile sintesi hanno dato vita a un prodotto esclusivo e distintivo dei territori delle attuali province di Modena e Reggio Emilia (cioè dell’antico Ducato Estense). A Modena sono sempre esistiti diversi tipi di aceto ottenuti col mosto di uva, in relazione allo sviluppo nella storia di diverse ricette, di diversi metodi di preparazione e di invecchiamento. L’origine di questi prodotti risale alla tradizione degli antichi Romani. Il più noto produttore dell’epoca ('600) era Giuseppe Giusti, tutt’ora attivo membro del Consorzio Aceto Balsamico di Modena, le cui produzioni di Balsamico di Modena sono testimoniate fin dal 1605, e del quale sono rimasti gli attestati di partecipazione a numerose fiere ed esposizioni. Dal punto di vista normativo, risale al 1933 la prima autorizzazione ministeriale a produrre "l'Aceto Balsamico del Modenese".
Viene dal mosto di uve caratteristiche modenesi. Il mosto, cotto a fuoco diretto, a vaso aperto, con una lenta ebollizione viene concentrato fino a ridursi ad un terzo del suo volume iniziale. ?Posto nei solai delle case, affronta il calore delle estati ed i rigori degli inverni adagiato nella sua dimora di botti in serie a capacità decrescente e dai legni diversi: rovere, gelso, castagno, ciliegio, qualche volta ginepro. ?Qui l'aceto Balsamico Tradizionale di Modena passa i suoi anni ad acidificare, a maturare, ad invecchiare a compimento di un equilibrio che solo l'alchimia del tempo e la mano esperta dell'uomo sanno produrre.
Aceto balsamico di Modena 50 Anni
La lenta maturazione in diversi tipi di legno, fra cui gelso, ginepro, castagno, ciliegio e rovere, gli conferisce una complessità particolare che lo rende ideale come complemento d’eccezione nelle grandi ricette o per essere degustato a gocce a fine pasto, per apprezzarne appieno tutti gli aromi e l’eccezionale densità.
Una sola goccia contiene tempo e passione, quelli delle generazioni che ci hanno preceduto. Straordinariamente complesso e corposo dal colore bruno carico e brillante è capace di offrire un ricco e armonioso crescendo di fragranze.
La collezione più esclusiva della casa, prodotta ogni anno in quantità estre- mamente limitata ed estratta da alcune preziose batterie di botti produttive dal 1700. Una di queste botti, codi cata come A3, fu portata dalla Giusti all’Esposizione Nazionale di Firenze del 1861 dove l’Aceto di 90 anni che ne venne estratto vinse una medaglia d’Oro, successo ripetutosi poi a Parigi all’Expò del 1889.
Iconicamente l’astuccio è composto dai 5 legni che compongono la tipica batteria di botticelle; l’etichetta frontale è incisa in oro 24 carati, mentre quel- la posteriore è realizzata con l’antica tecnica di stampa a caratteri mobili, uti- lizzando un carattere modenese in piombo dell’Ottocento.
Aceto Balsamico di Modena 100 anni
Dal gelso, la cui porosità facilita la concentrazione dell’aceto, passando per ginepro, castagno, ciliegio, acacia, ognuno in grado di donare aromi differenti. L’ultimo passaggio è nel rovere, per raggiungere la perfetta densità. Il risultato è un aceto balsamico superlativo, di straordinario corpo, con un ampissimo bouquet di profumi e sapori che spaziano dalla ciliegia al cacao, dal miele alla vaniglia ed alla liquirizia in un crescendo di sensazioni olfattive che permangono per un tempo straordinariamente persistente nel naso e nel palato.
La collezione più esclusiva della casa, prodotta ogni anno in quantità estre- mamente limitata ed estratta da alcune preziose batterie di botti produttive dal 1700. Una di queste botti, codi cata come A3, fu portata dalla Giusti all’Esposizione Nazionale di Firenze del 1861 dove l’Aceto di 90 anni che ne venne estratto vinse una medaglia d’Oro, successo ripetutosi poi a Parigi all’Expò del 1889.
Iconicamente l’astuccio è composto dai 5 legni che compongono la tipica batteria di botticelle; l’etichetta frontale è incisa in oro 24 carati, mentre quel- la posteriore è realizzata con l’antica tecnica di stampa a caratteri mobili, uti- lizzando un carattere modenese in piombo dell’Ottocento.
