Yellow Melon
The yellow melon is also known with the name of "winter melon" for the fact that it can be stored for a long time, sometimes until January. Although known and eaten as a fruit, it is a vegetable of the family Cucurbitaceae. Medium in size, has a rather leathery outer skin and an intense yellow color, quite smooth, usually devoid of the classic cracks in the traditional melon. The flesh is yellowish-white, hence the name of "white melon", fleshy, very rich in water, rather aromatic and sweet, with the presence of yellow seeds.
Yellow Melon with Mint: Cut the melon rind, do slices, remove the seeds, then cut the flesh into cubes and sprinkle with lemon juice and fresh mint leaves. Serve cold with some toothpicks. The ideal to refresh these hot days!
