Fresh Italian Porcini Mushrooms
Porcini mushrooms, also known as ceps, are the king of all mushrooms. They are meaty, rich and very versatile. These mushrooms are a wild product and, as such, sometimes arrive covered in a little dirt. This is harmless and can be cleaned off using a soft mushroom brush.
They work best cut up in slices and pan fried in olive oil and butter. Finish with a chiffonade of parsley and a touch of truffle oil. Serve on sourdough toast and you will be very happy.
