Extra Virgin OLIONOVO
Unlike wine which eventually improves, extra virgin olive is excellent just fringed. To underline this characteristic, Castellare has patented the name L'Olionovo, the authentic expression used by peasants to name the just fringed olive oil. Deep green, spicy enough to make it flovoured and tasteful. Obtained from Frantoi, Pendolino, Ascolane, Moraiolo Olive types. Fringing: strictly in the cold, stone grinding.
