Casa Madaio

Among the olive trees and chestnut woods, in a succession of beautiful and varied landscapes, in the National Park of Cilento, near the Amalfitan coast, there is Casa Madaio. Small medieval villages perched on hills, fragrant forests and untouched nature, this is the heart of a land called the “Garden of Europe”, where culture and traditions flourished and where, during the Magna Grecia, was born the Mediterranean diet.

The National Park of Cilento and Vallo di Diano today cover about 180,000 hectares, and in 1998 it was declareted UNESCO’s World Heritage.
Its location gives the region a varied topography with a wide variety of environments, in which the green hills flank the winding Amalfi Coast, which is also a UNESCO’s World Heritage site. The coast stretches for 42 kilometers on the Tyrrhenian Sea, and the mountain plunges steeply into the sea, which was the home of legendary Homeric girls. Sounds and colors captivate visitors, in a paradise, where sea and land come together to create an enchanting and inimitable landscape.
It is inevitable to live every moment, losing yourself in the pleasure of good food and conviviality.

From the tradition and love for cheeses born Casa Madaio, a dairy farm situated in Campania, in the National Park of Cilento.
Four generations handed down from father to son the techniques of ripening and producing cheeses. The result is a product not only authentic, but unique. The cheeses are realized in a natural and passionate way, enriched by the history of a refiners’ family, who has been able to protect and preserve his tarditions. The milk is worked daily in the laboratories of Eboli, in a modern and well equipped structure, where in alternate periods, is worked goat, sheep, cow and buffalo milk, only fresh milk, the main ingredient of Casa Madaio masterpieces, which can be extra fresh like the superb buffalo mozzarella, or seasoned like sbronzo.
The cheeses which require a longer seasoning period are transferred to Castelcivita, where they gain value in taste and aroma.
