Panettone cake Motta
Panettone Motta is a traditional masterpiece of the Italian art of making desserts. Since 1919, Motta's exquisite recipe is perfect for celebrating all special occasions with family and friends.
An ideal dessert: soft, rich in sweet raisins and delicious candied fruit, it is especially fragrant because of its natural leavening.
STUFFED PANETTONE WITH MASCARPONE CHEESE CREAM Ingredients for 6 people: 1 panettone, 4 egg yolks, 250 g of mascarpone cheese, 120 g of sugar, 250 g of fresh cream, 10 g of jelly, Rum or Maraschino. For the decoration: winter cherries, meringue, 50 g of dark chocolate, cocoa Dissolve the jelly previously softened and squeezed, in a little bit of liquor. Whisk the sugar with the egg yolks until you obtain a frothy mix, blend in the mascarpone cheese, the dissolved jelly and, last, the whipped cream. Mix the cream gently avoiding the formation of lumps. Cut the Panettone horizontally into 3 or 4 slices around 2 cm. thick. Spread each disc with a rich layer of mascarpone cheese cream.
Melt the chocolate in a bain-marie and dip the winter cherries. Decorate the panettone by dusting it with cocoa, then add the winter cherries and the meringues. Keep the cake in a cool place until you serve it.
