Passion and tradition: these are the key ingredients that are used to make the Cifarelli family bread since 1947.
Our company was founded to meet the needs of the many Matera families who enjoy home-made bread that is baked in a wood oven. It began as a public oven where the women would bring their own bread engraved with the mark depicting the initials of their breadwinner. The baker / grandfather Antonio, would place each piece in the oven where the wood from the nearby forests burned slowly releasing an aromatic fragrance, that would permeate the dough giving the bread it’s unique taste. With lots of waiting around, the bakery became a place of friendship and refreshment. The firing process usually lasted about three hours and once finished, the women would return to collect their beautiful golden bread with it’s equally pleasing aroma.
In the 1970s the tradition of baking bread in the household was abandoned, but this rural tradition of bread baking in Matera has become somewhat a cult & has since remained alive. The baker is the revered craftsman with his strong arms and harbouring the same patience of the ancient women. They continue to make this exceptional bread and to bake it in the wood oven to this day. In the name of tradition, the Cifarelli family (for three generations) continues to produce their unique and wonderful bread baked in their traditional wood oven. They declare that ‘Our pizza oven is one of the few remaining in our town. Many have been replaced with conventional ovens.’ Every day, the best ingredients of Lucania are mixed together with skill and patience. The yeast that is used gives strength to the mixture so that after a slow cooking process, the result is a bread crispy and golden, which due to its characteristics has been awarded the IGP.
The old recipes of our rural culture continue to have life in sweet and savory biscuits that we produce in our workshop. The cancelle, the scaldatelle, the frise are simple and genuine products that evoke the authenticity of the flavors of the past. Product quality and respect of production time make our bread and our biscuits very popular all over the country by the most demanding customers.
