Sodi di San Niccolò by Castellare di Castellina was created for the first time in 1977 and today represents an important piece of Italian viticulture. Everything born from the desire of Paolo Panerai, owner of the winery, which unites four estates in the 70s under the name of Castellare, but, for one of these, also adds the specification of Castellina, to underline the relationship between the wine produced here and the territory. The name Sodi di San Niccolò is born after a walk between Paolo and Luigi Veronelli that, admiring an ancient village with a central church of St. Niccolò and the vineyard nearby, highly suitable, Luigi suggested to call the top wine of 'company as the place where it was produced, rooting deeply with the earth and the environment of origin. The word Sodi was added to reinforce even more the territoriality of this wine: the word sodi, in fact, indicate those hard soils, rich in hard rocks and that characterize the corporate funds. Since its first vintage of the Sodi di San Niccolò has never undergone any filtration before bottling. Furthermore the grapes are 100% organic and not it makes no use of pesticides. Even the birds, always different, every year are pictured on labels, indicate respect for the environment and at the same time, represent a kind of act due to the territory,: Castellare of Castellina is located within an oasis of bird trapping and restocking. I Sodi di San Niccolò, a structured and elegant wine, with incredible freshness and a perfect tannins: an absolute reference point in the Tuscan wine scene.
