Pre cooked whole octopus

We guarantee that the cooking time of each Octupus Vulgaris depends on its size. We give it that exact time necessary so that consumers will find it well cooked and tender. Our octopus is never treated with any chemicals (neither preservatives nor colouring) so as not to alter its quality or taste.
WARM SALAD OF THE OCTOPUS AND POTATOES
INGREDIENTS: 1 small white onion, 1 rib of celery, 1 carrot, 1 tablespoon white wine vinegar, 3 bay leaves, a few juniper berries, 1 octopus of approximately 1kg, 8 potatoes about 120g each, chopped parsley, 1 clove of garlic, ground black pepper to taste, extra virgin olive oil to taste, salt to taste.
To prepare the salad of warm octopus and potato start putting on the fire a saucepan with water inside and peeled vegetables (carrot , celery, onion), bay leaf, juniper, vinegar and salt; then bring to boil. Wash and scrub the potatoes thoroughly, then dip them whole and unpeeled in the pot for 15 minutes, then add the octopus for 5 minutes, the time to warm it up . Once cooked, using a pair of pliers, remove the octopus from the pan and place it on a cutting board, where you will cut it in pieces; remove from the pan the potatoes , then peel and cut in half lengthwise, then in half again and finally in squares rather large, which will place in a bowl. Add therefore the octopus into pieces, and season with olive oil, chopped parsley, crushed garlic , salt and pepper. Serve the octopus salad and potatoes immediately (in this way will be still warm) or if you like, even cold.
