Giovanni Battista Perbellini and his brother Flavio continue the tradition started by their grandfather Giovanni Battista Perbellini, who in 1891 included in his book Pasta Lievitata the recipe for his Veronese cake Offella d’Oro, a sweet made with leavened dough. The grandsons still produce the cake to their grandfather’s instructions and have clearly inherited his passion for producing unique, hand-crafted pastries. The tradition is renewed every day as the brothers mix the precious leavened dough that will form the basis of the renowned Perbellini delicacies. And every day they wait for the magical transformation that turns simple ingredients into the sublime fragrances that arrive at your table. Because something as good as this requires perseverance and patience.

The Perbellini Panettone is a classic for Christmas. This time and labour intensive cake is created using the finest carefully selected ingredients. The dough is leavened for 24 hours before baking and then allowed resting time before being tastefully wrapped and traditionally hand tied with string and a dried grape vine as a handle.

Perfect with a bit of mascarpone cream and a good bottle of bubbles!
