
Burrata in leaf
The burrata in leaf is a creamy cheese wrapped in a leaf in order to preserve its soft consistency. It looks like mozzarella, but in its inside held a buttery heart of stracciatella, a mix of cream and frayed mozzarella. Obtained by a layer of stretched curd, it is stuffed, closed on the top and hand-tied in order to create the typical tuft. It is, nowadays, considered the most delicious product of Apulian dairy production.
Excellent with tomatoes and extra-virgin olive oil, with fresh truffle, with salami, or in the making of main courses.
